Enjoying a veggie burger from Smashburger

Tonight, I decided to get Smashburger for dinner. Located in the heart of Meridian, Idaho on East Louis Drive, I was so hungry after work and took it upon myself to grab a veggie burger and French fries to-go. As the menu here is quite extensive, offering so many great options for both vegetarians and vegans, I inquired about ordering one of their newest and most popular burgers, the Triple Double using their black bean burger patty.

The Triple Double burger and is served on an egg bun with lettuce, tomatoes, onions and pickles. I wanted to substitute the bun for the pretzel bun. Not because I don't like the egg bun (because it is good) but because I've never tried the pretzel bun and it looks better. The burger comes with extra American cheese. I decided to go the extra mile and order extra American cheese and extra cheddar cheese or melted aged cheddar cheese.

So, what did I think? The black bean burger patty was a little soft. As it was extremely flavorful, I felt like it was a little undercooked. The pretzel bun was delicious and really complemented the burger overall. The French fries were just ok for me. They are always good as a side, but I live in Idaho and prefer the thicker, homemade style of fries.

The Smash Sauce is outstanding. It is like a thousand island minus the ketchup. Better yet, if you were to make a thousand island sauce, mustard would be the main ingredient instead of ketchup. I literally would buy this sauce alone if they sold it there. Although the ranch was decent, I didn't find anything extremely special about it.

Overall, dinner was great. I managed to eat everything, as I was extremely hungry. I think the next time I eat Smashburger, I will definitely try something different.

Vegetarian Indian Style Butter Chicken

Recently, I have discovered so many things about the Indian culture. As rich as it is, it is also exotic and filled with an array of uniqueness that goes beyond what I can put into words. At least today. One of the things that I love about India is the food. And because the population is so large, their cuisine varies upon region. Utilizing agriculture and farming, most dishes are plant-based and/or vegetarian with the exception of a few. India offers quite a few staples, with one of them being butter chicken.

I decided to create a plant-based, vegetarian rendition of this classic dish. Originating from New Delhi, this North Indian classic uses dahi, garam masala, ginger, garlic, cardamom, fenugreek, cinnamon, black salt, and black pepper. To give it more of a vibrant flavor, you can add some lemon juice to it. To thicken the sauce, you can also add some butter or even some curd. I decided to add all of the above. As it took a little bit of time, everything was executed very well. I added a lot of butter to this dish, as I didn't have any ghee at my disposal.

When originally creating this dish, I was thinking of using another plant-based alternative from Gardein, but instead went with the Gardein Chick'n Strips. I decided to cook the sauce in a regular standard pan before adding the Chick'n Strips. This chicken is not only soy-free, it is dairy-free and certified kosher. I decided to cook the entire dish on low-to-medium heat as the plant-based chicken alternative was completely thawed out in the refrigerator.

Before plating, I made sure that the chicken had a good texture. When I originally added this to the pan with the sauce, it was soft with a modestly slimy texture. It is crucial that it is firm when it is cooked. After stirring multiple times to check, I knew that my cooking was done for the evening.

As I plated the food, I decided to garnish it with some homemade curd I made. I was very happy with the way it turned out. I am looking forward to making this again, only trying another vegetarian and/or vegan, plant-based chicken alternative. If you are a vegetarian looking to enjoy one of the greatest dishes from Bharat, this is it. From my home to your home, Namaste.

Vegetarian Recipes: Facon

Bacon is popular pork speciality around the world. As a vegetarian, I find myself discovering new ways to recreate this carnivore classic. And in my quest, I found various ways to make facon involving some of my favorite herbs and vegetables.

As a foodie, I am always in the kitchen. Whether it is trying a new recipe that I found on Yahoo! Shine or simply creating my own. In this case, I decided to create and try a new facon recipe.

For this facon recipe, you will need the following ingredients:

1 Cup of Dried Adzuki Beans (You can also use soy beans and/or mung beans)

1 Cup of Raw Buckwheat Groats

3 Tablespoons of Coconut Oil

3 Tablespoons of Grade B Maple Syrup

2 Tablespoons of Soy Sauce

2 Tablespoons of Nutritional Yeast

2 Tablespoons of Garlic Powder

2 Tablespoons of Onion Powder

2 Tablespoons of Paprika

2 Tablespoons of Black Pepper

2 Tablespoons of Kosher Salt

2 Tablespoons of Brown Sugar

1 Tablespoon of Tomato Paste

1 Tablespoon of Dry Mustard

1 Tablespoon of Molasses

1 Tablespoon of Apple Cider

First and foremost, it is key to soak the Adzuki beans with the Buckwheat groats in the same bowl. You don't need to season water, as fresh water works perfectly. The key is soaking them until they become relatively soft, but not mushy. Soak for 3-4 hours.

Once the beans and the groats have soaked, you want to drain them. It is key to make sure they are fully drained because the water will create a lot of mush (which is what you want to avoid).

As you continue, you want to add and combine all of your ingredients that are remaining into the same bowl with the Adzuki beans and Buckwheat groats. Blend until it forms a paste-like consistency. The texture should not be slimy nor should it be mushy.

Preheat the oven to 350F degrees.

In order to create amazing Facon, it is key to use a flat pan. If you don't have one, use a baking sheet or a pan that has somewhat of a flatter service. You will also need baking paper and before you apply your mixture, you are going to want to add a little more oil. For this particular recipe, I love using coconut oil.

Now you are going to want to start spreading the entire mixture out onto the flat pan. You want to spread it out thin. After you are done spreading this all out, you want to bake for 15 minutes. It is important to check sporadically. You want the top to be dry and/or brown, but not burnt.

Are you having fun yet? Once 15 minutes have lapsed, you want to cool for about 15-20 minutes. As you continue, it is important to remove the pan from the baking paper and lay on a flat surface. When I created my facon, I chopped it into 20 pieces, however; some people like to cut more and sometimes even less.

Congratulations! Your facon is done. And although it is done, it will still be a little soft. This is normal. You will want to take your pieces and put them in an airtight container and put them in the fridge or freezer. I like to take half of the facon and store it in the freezer, with the other half remaining in the fridge.

5 Grilling Tips You Need To Know When Cooking Vegetarian Alternatives

As a vegetarian, I have discovered that it can be quite complicated to embrace my inner grill master. In fact, I have had to mess up several times in order to grill effectively. With a wide-range, variety of vegetarian substitutes; grilling should never be as confusing as solving physics conjecture, for anyone wanting a veggie burger or a veggie dog. So, what are 5 grilling tips you should know if you are grilling a vegetarian alternative?

1. Use Coconut Oil. As one of the healthiest oils in the world today, this works as an amazing base for your vegetarian substitute. Whether you want to enjoy a classic veggie burger or even a kabob with veggie sausage, coconut oil will prevent your food from burning.

2. Use Cedar Planks. I discovered that when you a rich wood to grill a vegetarian substitute, the flavor is more flavorful and robust, then if you would use charcoal. Flavors will not meld properly if they are cooked incorrectly.

3. Use Variety. When it comes to grilling any kind of meat or chicken alternative, you will want to use a variety of mixed vegetables into the mix. With everything from onions and bell peppers to squash and mushrooms and much more, the options are endless.

4. Use Grill Baskets. Every vegetable on the planet is different and therefore; needs to be prepared differently. In order to grill effectively, I highly suggest using these the next time you grill any veggies.

5. Use Salt. Sure, it is important to season your food with your favorite spices, however; without salt you are left with nothing more than tasteless food. When you grill your vegetarian substitutes, along with your vegetables they lose flavor naturally, so in order to bring that flavor back to life it is key to use salt.

Quorn Chik'n Cutlets with Cranberry & Goat Cheese

Well, it is official, Fall is here and this Thursday, Thanksgiving will magically appear. If you are uncertain what to serve to the vegetarian guests this year, you may want to consider Quorn's Chik'n Cutlets with Cranberry & Goat Cheese.

I am not a fan of goat cheese all that much. In fact, if I had to choose my least favorite cheese, goat cheese would definitely be at the top. I have to admit though that I do enjoy it when paired with sweeter elements such vanilla, figs, apricots, pineapple, and cranberries. Yes, cranberries. In fact, when I first tried this amazing Quorn addition, I guess you could say that I found myself grabbing quite a few after I discovered how incredibly flavorful it actually was.

The flavors in this entree simply work. You can cook this in the oven and/or microwave. Personally, I love the oven for this fantastic entree simply because the food is crunchier and still has that robust, acquired flavor which is great. If you are searching for a good vegetarian meal to enjoy or to serve this holiday season, you simply cannot go wrong with this one.

Vegetarian Thanksgiving: How To Prepare A Quorn Turk'y Roast

As a lacto ovo vegetarian, I have discovered that eating a Thanksgiving meal is very much possible. Although there are many traditional dishes you can enjoy, there is more than just "sides" to a great meal. In fact, one of my favorite things to enjoy on the best time for giving thanks is definitely "Quorn's Meatless & Soy-Free Turk'y Roast" with "Tofurky's Savory Giblet Gravy".

First and foremost, you want to begin thawing your Turky's Roast. Even if it's still frozen, the key is to allowing it to thaw as much as possible. Before placing the roast onto a baking sheet, you want to cover it with aluminum foil. Add a little extra virgin olive oil followed by some salt & pepper.

Not many would think that freezing the actual gravy is a good idea, however; that is what I did when I prepared this particular vegetarian roast. In fact, I froze the gravy and then continued to let it thaw throughout the day until it turned into a paste-like gravy.
You want to pre-heat the oven for 350 degrees. You want to cover the entire turk'y with the giblet gravy. Use as much gravy as you can to cover it. It's a little thick, so be it. Think of it as a project and you have to cover it up with plaster. Once you have accomplished this, you want to stick it into the oven. Cook for 30-40 minutes.
Yay! It's done. Although it is going to be hot, you can cut into it. Just make sure not to serve it until you are ready to eat.

Whether you are a vegetarian or simply choosing the vegetarian route this holiday season, you cannot go wrong with choosing this food idea.

World Vegetarian Day 2014

Today is World Vegetarian Day 2014. As a vegetarian (Lacto Ovo, occasional vegan) for many years of my life, this is a day that promotes compassion and joy while celebrating the ethical, environmental, health, humanitarian, and practical benefits of a vegetarian lifestyle.

I absolutely love being a vegetarian and would recommend it to anyone. I think anyone can do it. If you don't believe me, just ask my amazing man, Joe Valo III, as he has been a Lacto Ovo vegetarian for over a year now.

So, what is a vegetarian? It's simply a lifestyle where one does NOT eat meat, poultry, or fish. In fact, as a vegetarian, does NOT consume any animal flesh at all.

Types of Vegetarians:

Lacto Ovo (or Ovo Lacto) = Does NOT eat meat, poultry, or fish. Does NOT consume any animal flesh. Does eat dairy, eggs, and honey.
Lacto = Does NOT eat meat, poultry, or fish. Does NOT consume animal flesh. Does eat dairy and honey, but does not eat eggs.
Ovo = Does NOT eat meat, poultry, or fish. Does NOT consume animal flesh. Does eat eggs and honey, but does not consume dairy.
Vegan = Does NOT eat meat, poultry, or fish. Does NOT consume animal flesh. Does NOT eat eggs, dairy, or honey.

Fruitarian = Does NOT eat meat, poultry, or fish. Does NOT consume animal flesh. Does NOT eat dairy, eggs, or honey. Only eats fruits, seeds, nuts, etc. that can be garnered without harming the plant.
Raw Vegan = Does NOT eat meat, poultry, or fish. Does NOT consume animal flesh. Does NOT eat dairy, eggs, or honey. Everything is fresh and uncooked.
Sattvic = Does NOT eat meat, poultry, or fish. Does NOT consume animal flesh. May consume dairy, but also excludes eggs and honey. Does NOT eat any vegetables from the allium family such as onions or garlic. Also does not consume bleu cheese, mushrooms, chocolate, nutmeg, or coffee.
Buddhist Vegan = Does NOT eat meat, poultry, or fish. Does NOT consume animal flesh. Does NOT eat eggs, dairy, or honey. Does NOT consume any vegetables from allium family. This includes: onions, garlic, leeks, chives, scallions, etc.
Jain = Does NOT eat meat, poultry, or fish. Does NOT consume animal flesh. Also does not consume eggs or honey, but can consume dairy. Also does not consume root vegetables.
Macrobiotic = Does NOT eat meat, poultry, or fish. Does NOT consume animal flesh. Does NOT eat eggs, dairy, or honey. Only consumes whole grains and beans.

If you are just starting, try the Pesce-vegetarian lifestyle (Pescetarianism), which excludes meat and poultry, but does include fish and seafood. It also includes dairy, eggs, and honey. You can also follow the Pollar-vegetarian lifestyle (Pollartarianism), which excludes meat, but still includes poultry and fish, as well as, seafood. Start as a semi-vegetarian and gradually build into the lifestyle.

Food Talk: Exclusive Interview with Gardein

When it comes to enjoying amazing vegetarian food, gardein is definitely one of the best there is. In fact, it is a personal favorite of mine. Recently, I had the chance to speak with the CEO and founder of Gardein, Yves Potvin about the brand. Here is what he had to say...

(Q) Tell me a little more about the gardein brand...
gardein (garden + protein) is a sustainable protein brand that creates deliciously meaty foods made from plants. We offer mouthwatering products that are good for you and good for the planet. Our product line-up includes 23 different products, ranging from beefless tips, golden fishless filets, as well as, awarding winning favorites such as seven grain crispy tenders and crispy chick’n sliders, and a selection of limited edition holiday items (Turk’y Holiday Roast stuffed with Wild Rice and Cranberries with traditional gravy). Breakfast, lunch and dinner are covered for anyone who wants to incorporate great tasting, plant-based protein into their diet.

(Q) Behind every great product lies a major source of influence. What inspired you to create this plant-protein brand?
I was inspired to create healthier, sustainable versions of foods people love to eat that offer real meat-like taste and texture I’ve always believed that plant protein should be at the center of every plate. It shouldn’t have to feel like a sacrifice to swap meatless options into your diet. We launched gardein in 2009 and have since become the fastest growing brand in the category. My goal is to continue developing new convenient and versatile plant-based proteins to feed the rising demand for healthier meat options. I feel it has never been easier to make the change in your diet for better health and a better environment.

(Q) It is evident that Gardein is made from plants, but is gardein free of genetically modified organisms (or GMOs)?
Yes, the soy protein and wheat in all our products are non-GMO We are currently enrolled with the Non-GMO Project and hope to be 100% non-gmo in the near future.

(Q) I absolutely love the 'Beefless Tips' however; everything I have tried by gardein has been fantastic. What are your current best sellers?
We love hearing that you love gardein! Of course we make delicious beefless items, but we’re so much more. We currently offer 23 products and to date, some of our most popular items are: the gardein golden fishless filet, which is our newest product, but already a fan favorite. It’s a cholesterol free, great-tasting protein that is rich in flavor and texture and provides 32 mg of EPA and DHA Omega-3 fatty acids. The gardein seven grain crispy tenders which provide a good source of protein with 8g per serving, no trans-fat and are ready in only 10 minutes! The gardein mandarin orange crispy chick’n is another favorite and a good source of protein with 17g per serving. It also comes with a sweet and tangy sauce. The gardein crispy chick’n sliders are perfect as a snack or meal, each meat-free slider comes with a bun and delivers 11g of protein and only 190 calories per serving. In addition this Item won Better Homes & Gardens Magazine Best New Product of 2014 as voted by consumers. The gardein ultimate beefless burger is ready in as little as 8 minutes and this beefless burger is made with 65% less fat than a beef burger.

(Q) Talking about the health benefits, what are the benefits of eating Gardein?
Eating meatless, even just one day a week, is the simplest way to improve your overall health. gardein has less fat than traditional proteins and no cholesterol, which can reduce the risk of obesity, cancer, diabetes, and heart disease. gardein also provides a good source of protein and fiber.

(Q) How do you flavor your products? I have to ask, the yeast extract that you use in your products, is it MSG or non-MSG?
While we won’t give away the secret to how we create such tasty treats, we can say confidently that there is no MSG in our product and we use non-MSG yeast extract to enhance gardein’s flavor. I was trained as a traditional French chef and understand that flavor is everything. Over the past 30 years, I have dedicated my career specifically to perfecting the taste and texture of plant-based foods.

(Q) Is it true that if you eat one less meat burger, it's like taking your car off the road for 320 miles? And if an entire family of 4 stops eating red meat for a week, it's like taking the car off the road for 3 months? Tell me a little more about these statistical facts...
Yes! gardein is making the world a better place, one meatless meal at a time. Many people don’t know that cutting back on meat just one day of the week, while beneficial to your health, has a drastic impact on the environment. One of the biggest environmental impacts of a meat-eating diet is the depletion of natural resources, specifically the consumption of large amounts of water for livestock production. Today, with more than 17 billion livestock in the world, that’s about triple the number of people, raising these animals requires huge amounts of water! Most of the water is used to irrigate the grains and hay to feed these animals – it can take up to 15 times as much water to raise animals compared to farming plants for food supply. Also, the Food and Agriculture Organization of the United Nations recently published a report stating that the livestock sector generates more greenhouse gas emissions than transportation.

(Q) What is your stance on animal cruelty?
We believe all animals deserve to be treated in a humane and compassionate manner. We support and applaud the efforts of the multitude of organizations bringing awareness and affecting policy change including PETA, HSUS, Mercy for Animals and Sea Shepherd.

(Q) I think a lot of your fans (like myself) want to know what products you are going to be coming out with next. The question remains, what is next for Gardein?
You’ll have to wait and see! We are always developing new protein innovations, new flavors and new categories to meet consumer’s culinary preferences. I can’t tell you what will be next, but I can tell you they will be tasty!

(Q) For those people considering the vegetarian or vegan eating lifestyle, what advice do you have for them?
Today, eating better for you protein is easier than ever. We suggest incorporating meat options, such as plant-based proteins, like gardein, into your diet slowly. Try eliminating meat once a week for Meatless Monday. Another great way to cut back on meat is to swap out the meat from your favorite meal with a plant-based options. Our website offers great meatless recipes that deliver tasty and filling meals.

Vegetarian Recipes: Khoresht Bodemjoon

Persian food <3
As a Persian woman, I am always finding myself in the kitchen cooking an array of cuisine especially Persian cuisine. There are so many amazing dishes, however; a lot of these dishes call for meat and/or fish.

As a lacto ovo vegetarian, I am always looking for ways to execute various ingredients into the cuisine without ruining the actual dish. Luckily, it is possible to enjoy your favorite Persian dish using various meat alternatives. Today, I am going to demonstrate one of favorite Persian dishes with a vegetarian spin on it.

One of my favorite Persian dishes is definitely Khoresht Bodemjoon, which is an eggplant and lamb stew that melts in your mouth. I said to myself "Although I know how to cook this using the traditional ingredients, is it possible to incorporate this dish into vegetarian cuisine" and guess what? It is very possible. Let's get started!

You are going to need the following ingredients...

2 Classic Eggplants

Vamb (see the recipe here)

1 Tomato

1 Red Onion

2 Garlic Cloves

2 Tablespoons of Tomato Paste

2 Tablespoons of Lemon Juice

2 Tablespoons of Soybean Oil

2 Tablespoons of Turmeric

2 Tablespoons of Salt

1 Teaspoon of Nutmeg

1 Teaspoon of Cinnamon

1 Teaspoon of Clove

1 Teaspoon of Dark Brown Sugar

1 Teaspoon of Black Pepper

You want to first and foremost, prepare the ingredients because it makes this dish so much easier to cook. You want to begin by dicing the onion. The onion should be chopped generously. Sit them aside. Once you get this out of the way, you can start on your tomatoes. Dice the tomatoes the same way you prepared the onions. Add a little bit of lemon juice and add the tomato paste. You want to smash and chop the garlic cloves before adding them into this dish. Set aside.

As you continue, you want to peel the eggplant. You want to them slice it. The slices should not be chopped or diced in cubes, but cut into semi-thick portions. Prepare a simple marinade of a little bit of oil and some salt in a bowl and add the eggplant to it. The lamb should be chopped into cubes, but they should also be generous sized and not cut small or thin. You can also use balls, as well. Today, I am going to use my very own interpretation of vegetarian lamb (Vamb).

In a cast iron pan (and if you don't own one, any heavy frying pan will work) you want to add the oil, followed by the diced onion, salt, and black pepper. You want to also add the lamb followed by the tomatoes you prepared. Then, as you want to add all of the rest of the ingredients including the garlic gloves, lemon juice, turmeric, nutmeg, cinnamon, clove, and dark brown sugar. You want to cook on high heat for 10 minutes and then cook on low to medium heat for about an hour.

As we continue making the vegetarian Koreshte Bademjan, you want to start frying the eggplant. Grilling the eggplant is a great idea, so you have that option too. You want to add a little more lemon juice and a little bit of oil, followed by salt and pepper. I also recommend adding a little bit of nutmeg. You want your eggplant to have some flavor, as you don't want it to be over powered by the soybean oil.

Once you have cooked everything, you can start plating your Koreshte Bademjan. You want to place your eggplant on your dish first. Two slices work amazing for every dish. As you continue, you want to take the stew you originally prepared with the lamb, onion, tomato, and additional spice mixture and apply it on top of the eggplant. You are done and have completed the vegetarian Koreshte Bademjan.

Vegetarian Recipes: Ghormeh Sabzi

I love cooking
Ghormeh Sabzi is one of the most popular Persian dishes in all of Persian cuisine. Today I am going to demonstrate how it is possible to turn this very favorable carnivore classic into something even more amazing, executing vegetarian alternatives and balancing various flavors that are truly paradise on the palette. Let's get started!

What you will need...
 3 Cups of Parsley

2 Cups of Spinach

1 Cup of Coriander

1 Cup of Red Onion

3 Cloves of Garlic

1 Cup of Dried Kidney Beans

1/4 Cup of Chives

1 Pack of Gardein's Home-style Beefless Tips

3 Tablespoons of Lime Juice

2 Tablespoons of Turmeric

2 Tablespoons of Soybean Oil

2 Tablespoons of Salt

2 Tablespoons of Black Pepper

1 Tablespoon of Lemon Juice

3 Limes

First and foremost, you want to prepare your ingredients. Because the kidney beans will need to soak for a few hours, you will need to prepare those first. In a separate bowl, you want to add about a cup of water followed by the kidney beans, a little bit of oil, salt, and pepper. Set aside.
Secondly, as you begin preparing the Ghormeh Sabzi, you want to chop your onions. They should be lightly diced in a cube-like fashion. As you continue, you want to smash and chop your garlic cloves. Create an oil and turmeric mixture with a little bit of salt, pepper, and lemon juice. Add the onions and garlic to the mixture. Set aside.

The meat in this dish definitely brings this amazing Persian dish to life. For this particular dish, I am going to use the entire pack of Gardein's Home-style Beefless Tips. Although you can use any meat alternative, I truly believe that Gardein makes one of the best I have used which is perfect for the Vegetarian Ghormeh Sabzi. You want to create a marinade using just a little bit of soybean oil, a little bit of turmeric, some salt, and some pepper and add the meat free alternative to the mixture. Set aside.

The greens should be chopped generously. You want to also add some oil followed by the limes. The limes should be whole, but you should use a knife and cut small holes into the limes. Add a little bit of salt. Set aside.

Now it is time to cook the Ghormeh Sabzi. Are you ready?

First and foremost, you want to begin cooking by adding the chopped onion and garlic into a large pan or medium sized pot. Because the mixture is already prepared, this will give you the opportunity to sauté them properly. Add a little bit of turmeric if necessary. Cook on low to medium heat.

You want to add the Gardein Beefless Tips as is, however; if you feel that they are too big (and some may actually find them too big) you can cut them in half and add them to the already cooking onions, garlic, and oil. Because you already prepared the marinade, you don't have to add anything. Cook on low to medium heat.

As you continue, you want to take your kidney beans and add them to the already prepared mixture. You want to also add your limes. Cook on medium heat. Then, you want to add your greens. Add the chives followed by the lime juice. Give everything a big stir and cover your large pan or medium sized pot and cook on low to medium heat for 1 hour and 45 minutes. Serve alone in a bowl or on top of chelow or shirazi rice on a plate. You are done and have completed the Vegetarian Ghormeh Sabzi.

Food Talk: 10 Luscious Late-Night Bites For Vegetarians

It's 11 pm and you are craving something good to eat. You are unsure of what you are in the mood for, so you decide to head into the kitchen to raid the fridge. Even though you have so many options, you are hungry and a bit clueless in terms of what you want to enjoy. So, what are the best late-night snacks?

1. Raspberry Kale Smoothie. All you need are raspberries, beets, kale, spirulina, flaxseed, and Silk very vanilla soy milk. That's it! One of my guilty pleasures is wanting to enjoy a late-night snack at night. Although this vegan friendly drink is healthy, it is also extremely delicious too.

2. Strawberry Mango Yogurt Pops. What do you get when you combine mango, Silk soy yogurt, lemon juice, and strawberries? Heaven on a stick. After combining the ingredients, just pour the mixture into molds and freeze for 2 hours. Not only vegan, but GMO-free too.

3. Monte Cristo Spinach Grilled Cheese. With only 3 minutes to prep and 5 minutes to cook, you can have this amazing grilled cheese done in under 10 minutes. This recipe is not only vegan, but gluten-free too.

4. Gardein Layered Taco Dip. Some of the best late-night treats are those spicy finds you can create in just a few minutes. 5 minutes to prepare - check, 8 minutes to cook - check, and only 1 minute to serve. Whether you are craving Mexican food or simply looking to enjoy a fusion of your favorite spices, this is a great late-night snack everyone can enjoy.

5. Olive and Bacon Tapenade. With only 201 calories and 23 carbs, this delicious late-night bite is perfect for anyone who is looking to enjoy salty snack at night. All it takes is several ingredients and about 10 minutes of your time.

6. Creamy Fig Smoothie. All you need are figs, So Delicious coconut yogurt, So Delicious vanilla coconut milk, water, flaxseed oil, ground cinnamon, and ice. Combine, blend, and serve. If you can't think of a great late-night treat to enjoy, you may want to consider this one.

7. Brie en Croute. Out of the many late-night bites, unfortunately this one takes the most time. However; there is a reason for it. If you are looking to enjoy French fusion at it's finest, this is the late-night snack for you.

8. Italian Sausage Flatbread. Not only is this one of the easiest things to make, but with only 5 minutes in preparation and 5 minutes in cooking, it's modestly quick too. In fact, all you need to do is bake this late-night entree for 3 minutes at 400 degrees F.

9. Tofurky Reuben. What do you get when you combine 5 slices of Tofurky peppered deli slices, 2 slices of cheese, sauerkraut, mayo, ketchup, pickles, lemon juice, on sliced rye bread? This late-night snack. In under 5 minutes, you can assemble this classic sandwich.

10. Blueberry Smoothie. One of the greatest late-night snacks is this healthy gem that I created randomly in the kitchen. All you need are fresh blueberries, flaxseed oil, Silk soy blueberry yogurt, Silk soy milk, stevia, and ice. Combine, blend, and serve.

Vegetarian Recipes: Vegan Lamb (Vamb)

Vegan Lamb (Vamb)
Vegetarianism is simply the philosophy and lifestyle where one refrains from eating meat, poultry, and fish. Sometimes vegetarians will include dairy, eggs, and honey (lacto-ovo). Some vegetarians may exclude eggs, but include dairy and honey (lacto) or exclude dairy, but include eggs and honey (ovo). Then, of course you have those that refrain from consuming not only meat, poultry, and fish; but eggs, dairy, and honey (vegan).

Recently, in the kitchen I found myself experimenting with an array of ingredients, as well as, herbs and spices. In my quest to make something "unique" that not only tasted great, but was different than my usual creations. And in my quest of doing this, I discovered how mimic the flavor of lamb using quite a few ingredients, which include:

2 oz. Lightlife's Gimme Lean Beef (or one pack)

2 cups of Almond Milk (unsweetened)

1 cup of Green Onions
8 tbsp. (or 1/2 cup) of Lemon Juice (Natural)

5 tbsp. (or 1/3 cup) of Olive Oil (Extra Virgin, i.e.)

4 tbsp. (or 1/4 cup) of Black Pepper

4 tbsp. (or 1/4 cup) of Kosher Salt

4 tbsp. (or 1/4 cup) of Cardamom

3 tbsp. (or 1/8 cup) of Nutmeg

3 tbsp. (or 1/8 cup) of Cinnamon

1 tbsp. of Apple Cider Vinegar

1 tbsp. of Mint

1 tbsp. of Ginger

2 tsp. of Golpar

2 tsp. of Clove

1 tsp. of Dill

1 tsp. of Turmeric

1 tsp. of Sumac
Although it is easy to make your own protein base, I chose to use Lightlife's Gimme Lean Beef because it is not only vegan, but GMO-free, as well. It is also naturally cholesterol-free and possesses an unique flavor that isn't robust or overpowering with spice. If you are allergic to soy or are following a gluten-free diet, I recommend making your own protein base using almonds, coconut, or peas substitutions. Also, keep in mind that every ingredient used in this recipe can be substituted in case you suffer from any allergy.

First and foremost, you want to prepare your vegetarian protein source. In this recipe, I am using Lightlife's Gimme Lean Beef. Whether you want to make burgers or balls is entirely up to you, however; you want to make sure that you have all of the right flavor fusions or your "vamb" will not turn out.

In a small pan, you want to add your almond milk. If you suffer from any nut allergies, I recommend soy, coconut, rice, or hemp milk. You want to add both cups followed by your lemon juice, salt, and pepper. Then, as you continue, I want you to add your cardamom, oil, nutmeg, cinnamon, and vinegar. Do not add the green onions. It is key to cook this on medium heat.

Add the burgers and/or balls. In this recipe, I am going to make simple vamb meatballs, simply because they are fun to execute in terms of simplicity. Add the rest of your ingredients and remove from heat. As it cools, you want to cover up the pan and place it into the refrigerator overnight.

After the vegetarian meat has soaked in those spices, you want to create add them to a new pan. When you look at the vamb, do you notice that it is dark in color and rich in texture? If so, you are ready to go. If not, you should repeat the above in moderation. Now when it comes to cooking the vamb, whether you want to season the pan is entirely up to you, however; I really enjoy using vegan butter such as Earth Balance or olive oil to fry the vamb on the stove top. I highly recommend cooking on medium-to-high heat for the first few minutes before removing the high heat and cooking solely on medium.

As you continue, you want to add your green onions or any other vegetable you choose. I chose green onions because they are subtle in flavor and balance this dish out. When you are frying your vamb, it is key that the edges look relatively dark, but not burnt nor black. If you are making balls, do not hesitate to cut into one as you are cooking and taste it, just to see if the flavors used were executed.

Congratulations you have just made vegan lamb aka vamb!
